In today’s recipe, I will be explaining how to make crème brûlée for beginners with simple and easy steps. This is a beginners recipe, but the outcome is incredible.

Crème brûlée only has 3 ingredients, but it is one of my favorite French recipes. In the video it’s heavy cream, vanilla sugar and egg yolks. With plain sugar, the vanilla goes in on its own. The custard spends the night in the fridge, so the fun part, torching the sugar on top, happens the next day.

Here is the recipe, and if you like videos better, here is my video, with the torching tutorial at the end.

The bain-marie

Bain-marie is the French name for a water bath. The ramekins bake inside a bigger pan of hot water, and the water keeps the heat around them gentle and even. That’s how a custard like this one sets smooth instead of curdling. It’s the same bain-marie I use for my crème caramel.

Leftover egg whites

The custard only uses the yolks, so you’ll have 6 egg whites left over. Don’t throw them away. My Cipriani meringue cake uses 10 egg whites in all, and its meringue gets torched too, so the torch comes out again.

For an Albanian custard, try my qumështor, a milk custard browned under the broiler. And my crème brûlée donuts get the same burnt sugar top from a caramel dip instead of a torch. Here is another recipe you might love: How to make Brownie Cake with Caramelized Sugar

Ingredients

0 of 5 ticked

  • Using vanilla sugar?

That’s what I use in the video. Use the same amount. If your vanilla sugar has a vanilla bean in it, add the bean to the cream and skip the extract.

  • Have a vanilla bean?

Even better. Use one bean instead of the extract. Cut it in half vertically and add it to the cream with the sugar.

You'll need

  • Medium saucepan
  • Whisk
  • Fine-mesh strainer
  • Large glass bowl
  • Ramekins (4, about 6 oz (175 ml) each)
  • Big baking dish (for the ramekins and the hot water)
  • Kitchen towel (to lift the ramekins out of the water)
  • Kitchen torch (or the oven broiler)

Instructions

  1. Warm the cream

    • First, to start making crème brûlée, we will heat a saucepan.
    • Next, add the sugar and combine it with the heavy cream.
    • Now here comes the flavor part, vanilla.
    • It would be best to use a fully grown vanilla bean for this recipe.
    • If you have one, cut it in half vertically, and add it to the mixture.
    • On the other hand, if you don’t have a vanilla bean, just use 2 tsp vanilla extract, which you can buy at any supermarket.
    • Next, mix the ingredients very well and let it heat up until it starts to create small bubbles, but not to a boiling point.
    • Finally, it is very important not to let it boil, because it will ruin the recipe.
    • You need
    • 2 cups heavy cream
    • ⅔ cup sugar
    • 2 tsp vanilla extract

    Small bubbles, never a boil.

  2. Let it rest

    • Let the mix rest for 15 minutes.
    • This way the heavy cream will absorb all the vanilla flavor.
    • After 15 minutes have passed, it’s time to strain it.

Turn the oven on to 300°F (150°C) now, so it’s hot by the time the ramekins go in.

  3. Make the custard

    • Next, we need to make the custard.
    • To make custard, we are going to use egg yolks.
    • After separating 6 egg yolks, put them in a big bowl and mix them together.
    • After the cream has cooled down, we continue to add it slowly to the eggs, mixing the whole time.
    • Furthermore, be careful not to add everything at once, because it will cook the eggs and ruin the recipe.
    • You need
    • 6 egg yolks

Slowly, or the heat cooks the eggs.

  4. Fill the ramekins

    • Next, get a big baking casserole and 4 ramekins.
    • In addition, fill the ramekins with the mixture we have just created and put them carefully in the casserole.
    • Fill the baking pan with hot water, up to 2/3 of the height of the ramekins.
    • In short, this technique is a bain-marie.
  5. Bake

    • Set the oven to 300°F (150°C) and carefully put the casserole inside.
    • Now here comes the tricky part.
    • You will never know the exact timestamp when the brulees will be ready.
    • Sometimes, it can take from 25 minutes to 40 minutes, depending on how big your ramekins are and how much water you put into the casserole.
    • The best way to know when they are done is to jiggle them.
    • In addition, they should jiggle almost like jelly.

    First check at 25 minutes.

  6. Cool and chill

    • After they are baked, carefully take the ramekins out of the hot water.
    • In the video I’m using some primitive tools for this (a kitchen towel).
    • Let them cool at room temperature for about an hour, and then store them in the fridge overnight, or for at least 4 hours.

At least 4 hours in the fridge.

  7. The fun part

    • The next day, when the brulees are ready, add some sugar on top of them and use a torch to create the crust.
    • On the other hand, if you don’t have a torch, use the oven broiler at high temperature.
    • Be careful not to burn it.
    • Once the sugar is all caramelized, put them back in the fridge for another hour.
    • Check the video to figure out how to torch the sugar.
A spoonful of crème brûlée lifted from the ramekin, yellow custard with shards of the caramelized sugar crust on top
    • You need
    • sugar for the crust

Even if you burn the sugar, don’t worry. It will still taste pretty good.

Questions

Questions about how to make creme brulee for beginners

How long does it take to make crème brûlée?

About 2½ hours of cooking, resting and cooling, then at least 4 hours in the fridge and 1 more after torching. I leave them in overnight and torch the sugar the next day.

Why bake crème brûlée in a bain-marie?

The hot water around the ramekins can’t get hotter than boiling, 212°F (100°C), so the custard bakes slowly and evenly. Without it, the eggs can set too fast and curdle.

How do you know when crème brûlée is done?

Give the pan a little shake. They should jiggle almost like jelly, with set edges and a wobbly middle. With a thermometer, the middle reads 170 to 175°F (77 to 79°C). If it still looks liquid, give them a few more minutes.

How do you make crème brûlée without a torch?

Use the broiler on high, with the rack as close to the top as it goes. Watch the whole time, because the sugar goes from brown to burnt very fast.

Is crème brûlée hard to make?

No, this is a beginners recipe. The tricky part is the timing, because it can take 25 to 40 minutes depending on your ramekins. Start checking at 25 minutes.

Can you make crème brûlée ahead of time?

Yes. It needs at least 4 hours in the fridge anyway, and covered, the custard keeps up to 3 days. Torch the sugar on the day you serve it, because the crust softens after a few hours in the fridge. It’s made with cream and egg yolks, so don’t leave it out for more than 2 hours (1 hour if it’s above 90°F/32°C).

What is crème brûlée made of?

Heavy cream, egg yolks, sugar and vanilla, baked into a custard. The top is a thin layer of sugar melted into a hard crust. The name is French for “burnt cream”.
