A crème caramel turned out on a black plate, with dark caramel sauce pooled around it

Let me show you how to make this French crème caramel. In Albanian it’s krem karamel. It’s a vanilla custard baked on top of a layer of caramel. When you turn it out of the ramekin, the caramel ends up on top as the sauce.

You only need milk, eggs, sugar and a vanilla pod for the custard, plus sugar and water for the caramel. It has to sit in the fridge for at least 2 hours, ideally overnight, so it’s a good one to make the day before. Here is the recipe, and if you like videos better, here is my one-minute video.

The caramel

Don’t stir the caramel. Stirring can cause sugar crystals to form, so we swirl the pan instead, which also helps it color evenly.

The water bath

The water bath is what keeps the custard smooth. The water around the ramekins can’t get hotter than boiling, so the eggs set slowly instead of curdling or turning rubbery. It’s the same bain-marie I use for my crème brûlée.

More custards

For an Albanian custard, try my qumështor. It’s milk, eggs, cornstarch, sugar and a vanilla bean, cooked into a thick cream and broiled on top. The vanilla pastry cream in my eclairs is a custard too, cooked on the stove instead of in the oven.

Ingredients

Caramel

Custard

  • No vanilla pod?

Use ½ teaspoon of vanilla extract or vanilla powder instead. In the video I use extract and add it after the milk.

You'll need

  • Small saucepan (for the caramel)
  • Medium saucepan (for the milk)
  • Ramekins (5 or 6, or one larger baking dish)
  • Mixing bowl
  • Whisk
  • Roasting pan (lined with parchment paper)
  • Kettle
  • Cooling rack
  • Plastic wrap
  • Thin knife

Instructions

  1. Make the caramel

    • Add ½ cup granulated sugar and 3 tbsp water to a small saucepan.
    • Shake gently to help dissolve the sugar.
    • Heat over medium-high heat without stirring.
    • Watch closely. The caramel will start forming in about 10 minutes, and then it caramelizes very quickly.
    • Once it turns light amber, swirl the pan gently.
    • Allow it to reach a medium-dark brown color. Too light and it will be overly sweet, too dark and it will taste bitter.
    • Immediately pour the hot caramel into 5-6 ramekins (or one larger baking dish), coating the base evenly.
    • Set aside to cool and harden.
    • Fill the saucepan with water right away to make cleaning easier.

    • You need
    • ½ cup granulated sugar
    • 3 tbsp water

Don’t stir it, just swirl the pan.

  2. Warm the milk

    • Preheat your oven to 350°F (175°C).
    • Split the vanilla pod (if using) and add it to the milk in a medium saucepan.
    • Gently heat until the milk is just below boiling point, then remove from heat and let it cool slightly.
    • Remove the vanilla pod and scrape in the seeds.
    • You need
    • 2 cups whole milk
    • 1 vanilla pod
  3. Make the custard

    • In a mixing bowl, whisk the eggs, yolks, and sugar together until they turn bright yellow.
    • Slowly pour the warm milk into the egg mixture while whisking gently.
    • If the milk is too hot, add it gradually to temper the eggs, so they warm up without scrambling.
    • Let the mixture rest for a minute to allow any foam to settle.
    • You need
    • 2 large eggs
    • 3 egg yolks
    • ⅓ cup sugar

    Hot milk cooks the eggs.

  4. Bake in a water bath

    • Place the caramel-lined ramekins into a roasting pan lined with parchment paper.
    • Pour the custard over the caramel, filling each ramekin nearly to the top.
    • Pour boiling water from a kettle into the roasting pan until it comes about two-thirds of the way up the sides of the ramekins.
    • This creates a gentle water bath.
    • Bake for about 40 minutes, or until the custards are just set. A knife inserted in the center should come out clean.
  5. Cool and chill

    • Carefully remove the ramekins and let them cool for about 10 minutes, then transfer them to a cooling rack.
    • Once cool, cover with plastic wrap and refrigerate for at least 2 hours (overnight is best).

    Ideally overnight.

  6. Turn them out

    • To serve, run a thin knife around the edge of each ramekin and invert onto a dessert plate.
    • The caramel runs over the top and becomes the sauce.

Questions

Questions about krem karamel

Is crème caramel the same as flan?

Pretty much. Flan is the Spanish name for a custard baked over caramel, and you’ll also see it called caramel custard or caramel pudding. Latin American flans often use condensed milk. This one is just milk, eggs, sugar and vanilla.

What is krem karamel?

It’s what crème caramel is called in Albanian. Turkish uses the same name, and in Serbian and Bulgarian it’s крем карамел. Same dessert, a vanilla custard baked over caramel.

What’s the difference between crème caramel and crème brûlée?

Where the caramel goes. Here it’s cooked first, poured into the bottom of the ramekin, and it becomes a sauce when you turn the custard out. Crème brûlée gets sugar torched on top into a hard crust and stays in its ramekin. My crème brûlée also uses cream and only egg yolks.

Can you make crème caramel ahead of time?

Yes, and you should. It needs at least 2 hours in the fridge, and overnight is best.

How long does crème caramel last in the fridge?

Covered, 3 to 4 days, which is USDA’s limit for leftovers. It’s made with milk and eggs, so keep it in the fridge and don’t leave it out for more than 2 hours.

How do you know when crème caramel is done?

When the custard is just set. The edges are firm and the middle still jiggles a little when you shake the pan. A knife in the center should come out clean.

Why did my crème caramel curdle?

It got too hot or baked too long. The eggs set too fast and the custard turns grainy, like scrambled eggs. That’s what the water bath is for, so take them out as soon as they’re just set.
