Homemade Qofte (Albanian Kernacka) Recipe

Qofte are Albanian meatballs, and kernacka are the long, grilled ones from Korçë. Mine are beef with potatoes, onion, garlic, paprika and oregano. The potatoes hold them together. About 2 hours of work, plus an hour in the fridge.

Bukë me qofte, a bread roll with grilled qofte, tzatziki and onions, cut in half and held in the hand

This might be the best qofte ever, and it’s because of one secret ingredient, potatoes. Qofte are usually made with bread or flour to hold the meat together, but this version uses potatoes instead. Mashed smooth, they disappear into the meat, hold everything together and keep the qofte juicy.

In the video I roll them long, like kernacka, and grill them. Let’s start making qofte, or if you like videos better, here is my video.

Qofte or kernacka?

Qofte are usually small patties. Kernacka are long and thin, like small sausages. They’re the qofte of Korçë, in southeast Albania, grilled and served hot. The mixture is the same here, so shape it the way your family does.

Bukë me qofte

Bukë me qofte is bread with qofte, the Albanian qofte sandwich. That’s how I eat them in the video, in a round bread roll with tzatziki and onions. If you want to make the bread too, try my pita bread for gyros.

For the tzatziki, I grate cucumbers and garlic and drain the cucumber juice. Then I mix them with Greek yogurt, olive oil, salt and the juice of half a lemon. The reason why we get rid of the cucumber water is because we want the tzatziki to be as creamy as possible.

Ingredients

0 of 9 ticked

  • Can I use another meat?

Yes. Kernacka are also made with lamb, and qofte with veal. You can mix beef and lamb too. Cook any of them to 160°F (71°C) in the center.

  • Why potatoes and not bread?

Qofte are usually held together with bread or flour. Potatoes do the same job and keep the meat from drying out. With no bread in the mix, the qofte are gluten free.

You'll need

  • Large pot (for the potatoes)
  • Potato masher (or a grater)
  • Box grater (for the onions)
  • Garlic press (or a knife)
  • Big bowl
  • Plastic wrap
  • Large skillet or grill
  • Paper towels
  • Meat thermometer

Instructions

  1. Prepare the potatoes

    • Peel the potatoes.
    • Cut them into big chunks so we can boil them easily.
    • Boil them in salted water until just tender when pierced with a fork.
    • Drain very well and let them cool completely.
    • Once cooled, grate the potatoes on the fine side of a grater or mash them very smoothly.
    • You want them smooth so they disappear into the qofte and act as a binder.
    • You need
    • 2 potatoes
  2. Prepare the onions and garlic

    • Peel the onions and grate them on the fine side of a grater, or pulse them in a food processor until very finely chopped.
    • Squeeze out some of the excess liquid from the onions with your hands or a clean kitchen towel so the mixture does not become too wet.
    • Peel the whole head of garlic and finely mince or grate the cloves.
    • You need
    • 3 onions
    • 1 whole head of garlic

  3. Combine the mixture

    • In a big bowl, add the grated or mashed potatoes.
    • Add the grated onions and minced garlic.
    • Sprinkle in the salt, paprika, and oregano.
    • Combine everything together and then add the ground beef.
    • Crack in the 3 eggs.
    • Mix everything together very well, folding and pressing the mixture until it becomes sticky and uniform.
    • This step is important.
    • The more you mix, the better your homemade qofte will hold together.
    • You need
    • 1 tbsp salt
    • 1 tbsp paprika
    • 1 tbsp dried oregano
    • 5 lb ground beef
    • 3 eggs

The more you mix, the better it holds together.

  4. Rest the mixture

    • Cover the bowl with plastic wrap or a lid.
    • Refrigerate for at least 1 hour, or up to overnight.
    • Resting lets the flavors blend and the mixture firm up.
  5. Shape the qofte

    • Lightly oil your hands so the mixture does not stick.
    • Grab about half a cup and start rolling it with your fingers.
    • Shape into small oval patties or finger shaped logs, the traditional kernacka shape.
    • For kernacka, we are looking to form a cylindrical shape of about 3 to 4 inches (8 to 10 cm).
    • Place them on a tray or plate.
    • Continue until all the mixture is shaped.

  6. Cook the qofte

    • You can grill, pan fry, or bake. Here is a simple pan frying method.
    • Heat a large skillet over medium to medium high heat.
    • Add oil to the pan.
    • Place the qofte in a single layer without crowding.
    • Cook for about 4 to 6 minutes per side, depending on thickness, until nicely browned and cooked through in the center.
    • Check one with a meat thermometer. It's done at 160°F (71°C) in the center.
    • Transfer to a plate lined with paper towels while you finish the rest.
Kernacka with dark grill marks on a hot grill, with flames coming up between the grates

I grill them in the video. Preheat the grill to medium high. Lightly oil the grates. Grill the kernacka for about 3 to 5 minutes per side, until charred on the outside and cooked through.

    • You need
    • 3 tbsp olive oil or neutral oil
  7. Serve

    • Serve your homemade qofte / Albanian kernacka:
    • With fresh bread, salad, and yogurt or tzatziki
    • In a sandwich with onions, tomatoes, and pickles
    • Alongside grilled vegetables or fries
    • Or as bukë me qofte, in bread with tzatziki and onions, the way I eat them in the video.

Questions

Questions about qofte

What is qofte in English?

Albanian meatballs. The Albanian dictionary describes qofte as ground meat mixed with onion, eggs and spices, shaped like a patty or a short stick. In my video I call them kofta.

What is bukë me qofte?

A qofte sandwich. Bukë is Albanian for bread, and me means with. Mine is grilled kernacka in a bread roll with tzatziki and onions.

How do you pronounce qofte?

CHOF-teh, with the stress on the first syllable. The Albanian q is close to the ch in "chew".

How do I keep qofte from falling apart?

Mix it really well, until the mixture turns sticky. The salt pulls a protein out of the meat that works like glue. An hour in the fridge helps too, because a cold mixture holds its shape better.

Do I need to squeeze the onions?

Yes. Onions release a lot of liquid, and squeezing out the excess prevents the mixture from becoming too wet. This helps the qofte hold their shape during cooking.

Can I bake the kernacka instead of frying or grilling?

Yes. Place the qofte on a parchment lined baking tray and bake at 400°F (205°C) until lightly browned. It usually takes 18 to 22 minutes, depending on size. They're done at 160°F (71°C) in the center.

Can I freeze the qofte mixture?

Yes. You can freeze the entire mixture in a sealed container or shape the qofte first and freeze them individually. When ready to cook, thaw them in the refrigerator and proceed as usual. USDA says frozen ground beef is best used within 4 months.

How many calories are in qofte?

About 650 calories per serving, with 10 servings in the recipe, from USDA data. That doesn't count the oil for frying or the bread.
