Today I will teach you how to make shrimp crudo. It is very easy and doable.

Freshness and freezing

The shrimps have to be very, very fresh. If the shrimp is not fresh, it may cause many different diseases. You don’t want to get that big worm in your stomach. It is a good practice to freeze the shrimp before using it, because freezing kills parasites if it’s cold and long enough.

Freezing doesn’t kill most bacteria, though, and the lemon juice doesn’t kill Vibrio, the bacteria you can get from raw shellfish. That’s why the shrimp have to be fresh to begin with, and cold the whole time. There is more on this, and on how long to freeze them, in the questions below.

Ingredients

0 of 8 ticked

  • No kitchen scale?

5 g of ground black pepper is about 2 teaspoons.

You'll need

  • Fork (to juice the lemons and beat the sauce)
  • Bowl
  • Hand mixer
  • Small knife
  • Plate
  • Spoon

Instructions

  1. Freeze the shrimp

    • Make sure to freeze the shrimp before using.

The FDA standard is 7 days at -4°F (-20°C) or colder. A home freezer at 0°F (-18°C) is warmer than that, so shrimp sold for eating raw is the easier way. Thaw them in the fridge overnight, or sealed in a plastic bag in cold water.

    • You need
    • 8 fresh shrimp

Freezing kills parasites if it’s cold and long enough. It doesn’t kill most bacteria.

  2. Make the sauce

    • First, cut the lemons in half.
    • Use a fork to take the juice out of the lemon.
    • Save the juice in a bowl.
    • Make sure to remove all the seeds from the juice, otherwise… to be honest, nothing is gonna happen.
    • It’s just some people who think that seeds will kill them if they appear on the plate.
    • Anyway, put the olive oil in the lemon juice with salt and pepper.
    • Use a hand mixer to mix it until the lemon sauce becomes homogeneous, which by the way means “same kind”, but it just sounds cooler saying it like that.
Juicing a lemon with a fork in three photos, a fork beside a lemon cut in half, the fork pushed into one half, and the half squeezed over a bowl
    • You need
    • 2 lemons
    • 1 tbsp olive oil
    • ½ tsp salt
    • 5 g black pepper
  3. Clean the shrimp

    • After taking the skin off, use a small knife to cut the shrimp as in the picture.
    • Make sure to remove the black digestive tract, a.k.a. the pooping intestine.
    • The digestive tract needs to be removed because it gives the shrimp a bitter taste.

  4. Into the fridge

    • To prepare the dish we mix the shrimp with the sauce.
    • Put the bowl in the fridge for 20 minutes.
  5. Plate it

    • After the time has passed, put the shrimps on a plate.
    • Take a fork to beat the mixture left from the shrimps.
    • Use a spoon to put the mixture on top of the shrimps.
    • You may decorate the plate as you want.

The photo up top has arugula leaves, thin carrot strips rolled up, and a cherry tomato cut into wedges, with a parsley sprig.

    • You need
    • 1 bunch arugula
    • 1 carrot
    • 1 cherry tomato

Questions

Questions about how to make crudo shrimp

What is shrimp crudo?

Crudo is the Italian word for raw. Shrimp crudo is raw shrimp in a sauce of lemon juice, olive oil, salt and pepper. Nothing gets cooked.

Is it safe to eat raw shrimp?

There’s always some risk, and the FDA says cooking seafood is the safest way to eat it. If you eat it raw, use shrimp that was frozen long enough, and cold enough, to kill parasites. Freezing doesn’t kill all germs, so the shrimp still have to be very fresh and cold. Pregnant women, children, older adults and anyone with a weakened immune system should skip raw shellfish.

How long should I freeze the shrimp?

For seafood eaten raw, the FDA standard is 7 days at -4°F (-20°C) or colder. The FDA says a home freezer should be at 0°F (-18°C), which is a little warmer. The easier way is shrimp sold for eating raw. The FDA Food Code says those have to be frozen that way before they’re sold.

Does the lemon juice cook the shrimp?

No. It gives the shrimp flavor, but they’re still raw. The CDC says lemon juice doesn’t kill Vibrio bacteria. The FDA even lists ceviche, fish marinated in lime juice, among the raw dishes linked to parasites.

Can I make prawn, red prawn or scampi crudo?

Yes. Shrimp and prawn aren’t scientific names. In the US the bigger ones are usually called shrimp, and in most other English-speaking countries prawns. In Italy, scampi are langoustines. Whatever you use, the same rules apply.

How do I know if shrimp is fresh?

Raw shrimp should look clear, with a pearl-like color, and have little or no smell. That’s the FDA’s test. Keep them in the fridge at 40°F (4°C) or below, and use them within 2 days.
