Today I will show you how to make chocolate cake with strawberry and cream cheese. From all the posts that I have posted so far, you guys have noticed how much I love chocolate. Today we are making one of my favorite cakes. It will include strawberries, chocolate and cream cheese. Name a better trio, I will wait!

A faster way to melt chocolate

Remember the bain-marie we used in the brownie cheesecake? It’s basically a bowl sitting on top of a pan with simmering water. That is one of the most famous techniques for melting chocolate. Today, I will show you a new, faster way to do it. The chocolate and butter go straight into the pan, so the heat has to stay low.

To decorate

You'll need

  • Pan (for melting the chocolate and butter)
  • Mixing bowls
  • Baking pan
  • Sifter (for the powdered sugar, if it has clumps)
  • Frosting bag
  • Round cutter (or any circular shape, to cut the cake)

Instructions

  1. Melt the chocolate and butter

    • Put 1 cup chocolate and ½ cup butter in a pan on low heat.
    • Start stirring the mixture as soon as you realize that it is melting.

Turn the oven on now, so it’s at 350°F (175°C) by the time the batter is ready.

    • You need
    • 1 cup chocolate
    • ½ cup butter
  2. Beat the egg yolks and sugar

    • In another bowl, mix 2 egg yolks with ½ cup sugar for around 10 minutes.
    • You need
    • 2 egg yolks
    • ½ cup sugar
  3. Make the batter

    • When the chocolate and butter are fully blended together, add them to the egg yolk and sugar mixture.
    • Add ¼ cup flour and ¼ tsp salt, and mix it well.
    • When the mixture cools down a little bit, add 1 tsp baking powder and the vanilla extract.
    • You need
    • ¼ cup flour
    • ¼ tsp salt
    • 1 tsp baking powder
    • vanilla extract
  4. Bake

    • Put it in a baking pan and bake it for 20 minutes at 350°F (175°C).
    • Make sure to check it very often.
    • Depending on the oven, sometimes the batter might cook faster.
    • Just 1 minute too long can burn the whole thing.

One minute too long burns it.

  5. Beat the cream cheese and butter

    • To make the frosting, this time we will use cream cheese.
    • Add 120 g cream cheese to a bowl and mix it very well with ¼ cup butter until everything is homogeneous.
    • If you are mixing it by hand, it will take around 10–15 minutes.
    • You need
    • 120 g cream cheese
    • ¼ cup butter
  6. Add the sugar and cool

    • Add ¾ cup powdered sugar.
    • Make sure to sift it if the powdered sugar has a lot of clumps.
    • When the mixture is ready, put it in a frosting bag and cool it down for 20–30 minutes.
    • You need
    • ¾ cup powdered sugar
  7. Cut and decorate

    • For the photo, I used a circular shape to cut the chocolate cake.
    • Start decorating the cake with the frosting bag as you please.

In the photo, there’s strawberry between the two rounds and a swipe of strawberry sauce on the plate. To make one, see the strawberry jam in my brownie cheesecake.

    • You need
    • strawberries

Questions

Questions about chocolate cake with strawberry and cream cheese

How do you decorate chocolate cake with strawberries?

In the photo, I cut the cake into rounds with a circular shape and stacked two of them. There’s a layer of strawberry and then cream cheese frosting in between, more frosting piped on top, and strawberry sauce on the plate. Other than that, decorate it as you please.

Can you melt chocolate without a bain-marie?

Yes, that’s the faster way I use here. Chocolate scorches easily on direct heat, so keep the heat really low and stir as soon as it starts melting. Take it off while a few small pieces are left, and they’ll melt on their own.

Why is my cream cheese frosting lumpy?

Usually it’s the powdered sugar or cold butter. That’s why the recipe says to sift the sugar if it has clumps. Use butter at room temperature, so it mixes in smoothly with the cream cheese.

Why is my cream cheese frosting runny?

Usually it was beaten too long, or the cream cheese was low-fat, which has more water. A warm kitchen softens it too. Use full-fat cream cheese, don’t overbeat it, and let it cool in the bag for 20 to 30 minutes before you pipe it.

Does chocolate cake with cream cheese frosting need to be refrigerated?

Yes. Cream cheese frosting is perishable, so don’t leave the cake out for more than 2 hours (1 hour if it’s above 90°F/32°C). Covered in the fridge, leftovers keep 3 to 4 days.

How many calories are in chocolate cake with cream cheese frosting?

About 850 calories per serving, with 4 servings in the recipe, from USDA data. That doesn’t count the vanilla or the strawberries. Most of it is the chocolate, the butter and the sugar.
