On the third episode of cooking with Xhulio, we made the refreshing cucumber yogurt salad with sumac and radishes. This recipe will blow your mind. It is so refreshing and so summery that you think you are at the beach.

- 8-10 cucumbers
- 1 cup Greek yogurt
- 1/5th of an onion
- 1 bunch radishes
- fresh dill
- fresh mint
- 1 garlic clove
- 3 tbsp. extra virgin olive oil
- 1 tbsp. red wine vinegar
- 3 tsp. sumac
- 1 tsp. salt
- coriander seeds
Aromatize Olive Oil with Mint
To start off making this delicious salad we are going to heat some olive oil in a pan. Right before the olive oil starts smoking, take it off the heat, and pour it into the bowl with the dry mint. This is going to aromatize the olive oil.
Smash the cucumbers for Refreshing Cucumber Yogurt Salad
What is a refreshing cucumber yogurt salad without some fun. Let’s crush some cucumbers. Grab your cucumbers and start smashing them with your fists. Here is where you can release all the anger from your unnecessary online meetings. Once the cucumbers have been smashed into bite-sized pieces, put them in a large mixing bowl.
Grab the red onion and cut it into thin pieces. Make sure to chop it into smaller pieces. Put the onion in a small bowl and add the sumac and the red wine vinegar. This is going to marinate the onion so that the onion flavor is not too strong in the salad. You can eat this and safely speak to your crush right after. Put the onion aside and let’s prepare the radishes.
Slice Radishes Thinly
One way to elevate this refreshing cucumber, yogurt salad is by adding one of the most refreshing roots; radishes. Grab your radishes and start cutting them into very thin slices. Put all your slices into the bowl where the cucumbers are. Don’t throw those radish leaves away. Make sure to wash them and chop them into bite-size pieces because in this recipe, they are a must. Add them to the bowl where the cucumbers are as well.
What is a refreshing cucumber, yogurt salad without the herbs? Next, let’s start chopping the dill and the mint. Begin with the dill. Chop the stems off and throw them away. Chop the rest of the dill and then put it into the large mixing bowl. As per the mint, make sure to remove all the leaves from the stem. Stack them together and cut them thinly. Add them to the bowl as well.
Last, but not least, we are going to mince one garlic clove. Make sure the garlic is chopped into very small pieces because we don’t want to bite into it.
Finalizing Refreshing Cucumber Yogurt Salad
Before mixing everything together, add the onions that we marinated earlier into the mixing bowl. Make sure to also add a little bit of olive oil and mix it really well. Don’t forget to salt it.
Grab your favorite plate and add a few spoons of Greek yogurt. Start putting the salad that we just prepared on top. Make sure to drizzle a few drops from the olive oil and mint that we prepared at the beginning of the recipe. Finally, make sure to top it off with some coriander seeds.

Refreshing Cucumber Yogurt Salad with Sumac & Radishes

Ingredients
- 8-10 small cucumbers
- 1 cup Greek yogurt
- 1/5th onion
- 1 bunch radishes
- fresh dill
- fresh mint
- 1 clove garlic
- 3 tbsp. extra virgin olive oil
- 1 tbsp. red wine vinegar
- 3 tsp. sumac
- 1 tsp. salt
- some coriander seeds
Instructions
Step 1: Aromatize Olive Oil with Mint
- Heat olive oil in a pan until it's about to smoke.
- Remove the pan from heat and pour the hot oil over dry mint in a bowl to aromatize the oil.
Step 2: Smash the Cucumbers
- Using your fists, crush the cucumbers into bite-sized pieces.
- Place the smashed cucumbers in a large mixing bowl.
Step 3: Marinate the Onion
- Thinly slice 1/5th of a red onion.
- Place the sliced onion in a small bowl.
- Add sumac and red wine vinegar to the sliced onion.
- Let the onion marinate to mellow its flavor.
Step 4: Prepare the Radishes
- Thinly slice the radishes.
- Reserve the radish leaves; wash and chop them into bite-sized pieces.
- Add both radish slices and chopped leaves to the mixing bowl with cucumbers.
Step 5: Chop Herbs
- Chop the dill, discarding the stems.
- Remove mint leaves from the stems and thinly slice them.
- Add chopped dill and mint to the mixing bowl.
Step 6: Mince Garlic
- Mince the garlic clove into very small pieces.
Step 7: Mix the Salad
- Add the marinated onion to the mixing bowl.
- Drizzle in a bit of olive oil and mix well.
- Season with salt.
Step 8: Assemble the Salad
- On a favorite plate, spoon a few portions of Greek yogurt.
- Place the prepared salad on top of the yogurt.
- Drizzle with the mint-infused olive oil from earlier.
- Finish by sprinkling coriander seeds over the top.
