Chicken Noodle Soup

The word soup comes from French (soupe) which means broth. Soups can be divided in two separate categories, clear and thick soups. The one we are making today is a clear soup. I don’t know how much you love soup but trust me, you are going to love this one.

Ingredients
  

Broth

  • 1 Whole Chicken
  • 2 Celery
  • 1/2 Onion
  • 1 tbsp Olive Oil

Soup

  • from above Shredded Chicken
  • 1/2 Onion
  • 1 Celery
  • 5 Carrots
  • 1 tbsp Olive Oil
  • 1/2 cup Noodles
  • 6 slices Bread
  • as desired Salt & Pepper

Instructions
 

Chicken Broth

  • After cleaning the chicken (and by cleaning I mean washing it), use a soup pan to boil it. Add water until the chicken is completely soaked. To give it a better taste, combine with celery, olive oil and the onion. Leave the pan boil on low heat for approximately 1 hour. After the chicken is fully cooked, separate the meat from the bones and shred it. The shredded pieces should have the size of a bite. Save the broth as we are going to use it for the noodle soup later. Do not forget to remove the celery from the soup because we are going to add some new one later.

Chicken Noodle Soup

  • Using the same pan as before, fry the chopped onion until it gets a brown color. Later, add the chopped celery and the chopped carrots. If the onion gets burned, do not use it to continue further. Approximately 5 minutes later, pour the broth that we made with the meat and the vegetables. Cover the pan and boil it for another 10 minutes.
  • When the carrots are boiled, add the noodles to the broth. The noodle will not take more than 10 minutes to get cooked. If we would have added them before, the would have been completely dissolved with the broth. At the end, add the shredded chicken, salt & pepper.
  • It is very important to use low heat, because it helps the ingredients to maintain their shape and their deliciousness. Grill some bread to use it for dipping.
